Shortbread is such a crowd pleaser. All that's required is 4 basic ingredients and you have yourself a recipe that's versatile enough to eat on its own or used to create favourites like jam drops.
Basic Shortbread Biscuits
Ingredients
2 cups all-purpose flour
1 cup unsalted butter (room temperature)
1/2 cup caster sugar
1 Tbsp vanilla essence
Method
1. Mix the sugar and room temperate butter in a mixer or food processor until combined.
2. Add the vanilla and flour to the mixing bowl, gradually adding the flour in smaller batches.
Once the mixture has combined to create larger lumps, gather into one large ball. Wrap the dough in cling wrap and refrigerate for 2 hours.
Preheat fan-forced oven to 160 degrees.
Flour a clean working surface and remove chilled dough from refrigerator.
Roll dough into a 5mm thick sheet, then cut biscuits out using a 8mm circle shaped cookie cutter.
Place biscuits onto a lined baking tray and place in the oven, baking for 10 minutes or until just golden.
Transfer biscuits to a cooling rack, where they will harden as they cool.
