Oh, Darling! We check out Paddington's Darling & Co

In recent months you would’ve driven down Paddington’s Given Terrace and seen the new, pristine signage replacing what used to be Ice Works. What was once a watering hole for sporting fanatics is now Darling & Co, an eating-house and bar fitted out with a modern timber and marble interior, hanging greenery and plush cushions that give off tropical vibes. The menu offers refined eats and beautifully exotic cocktails, like ’10 Days in Tahiti’ – we’ll get around to that delightful experience later.

To give you an idea of the calibre of food here at Darling & Co, we’ll introduce you to the Executive Chef. At only 30 years of age, Executive Chef Giuliano Melluso takes full control in the Darling & Co kitchen. His cheffing career has taken him from The Ebury, to Le Petit Maison and Michelin Star restaurant, Kitchen W8 in London. Having these previous positions under his belt as well as his Italian heritage has given him the ability to hone his skills in handmade pasta. We sampled both the Moreton Bay bug ravioli with shellfish emulsion and charred leek and the crispy skinned barramundi with pumpkin puree and sautéed gnocchi (hand-rolled, of course), both were outstanding!

To begin, cocktails! In this department Darling & Co offers both a list of classics, pitchers and six of their own unique creations. Inevitably, we chose from their in-house cocktails, the names being too enticing not to enjoy ’10 Days in Tahiti’ or Thailand Rockin’. 10 Days in Tahiti is a concoction of Ketel One Vodka, watermelon, coconut, mint and lime while Tanqueray Gin, rockmelon, orange and Thai basil creates a Thailand Rockin’.

For entrées we chose two dishes: the hiramasa kingfish tacos served with finely sliced green papaya, coriander and finger lime caviar and Hervey Bay scallops with celeriac, fennel, pickled apple and a salty guanciale crumb. After ordering a seafood heavy lunch, we came to one conclusion; these guys know their way around seafood.

We wrapped up our three-course lunch with an American inspired dessert, rhubarb Twinkie with pistachio ice cream. A Twinkie like textured cake base filled with tangy rhubarb, a great pairing! And lastly the service, which was nothing short of memorable, made our entire experience a 10/10.
